Te lo contamos a continuaci\u00f3n.<\/p>\n<h2>Importancia del <em>socarrat <\/em>en la paella<\/h2>\n<p>Se denomina as\u00ed a<strong> la capa, de unos dos mil\u00edmetros de espesor<\/strong>, que se forma entre el arroz y la base de la paella. La misma se crea durante la cocci\u00f3n, ya que las grasas y el az\u00facar de los ingredientes van bajando progresivamente acumul\u00e1ndose en el fondo. El objetivo es crear una capa crujiente con un sabor intenso que convierta su degustaci\u00f3n casi en un examen para tu paladar.<\/p>\n<p>La idea es tostar, que no quemar el arroz y combinarlo con el resto creando as\u00ed texturas diversas y matices gustativos m\u00e1s interesantes. Para lograrlo debes tener en cuenta dos factores fundamentales:<\/p>\n<p>\u00b7 <strong>El tipo de ingredientes<\/strong> utilizados. Si eres el cocinero debes controlar la cantidad de l\u00edquido de cada uno de ellos, medir su cocci\u00f3n y evitar que el arroz se te quede demasiado seco.<\/p>\n<p>\u00b7 <strong>La cantidad de caldo<\/strong> a utilizar. La proporci\u00f3n siempre es el doble de caldo que de arroz, pero tambi\u00e9n depende del tipo de paella que se utiliza, del tipo de fuego y del punto que le quieras dar.<\/p>\n<p>El punto exacto del <em>socarrat <\/em>se consigue cuando el col\u00e1geno comienza a dorarse. Lo de subir el fuego al m\u00e1ximo los \u00faltimos tres minutos solo conlleva que el arroz se queme y termine por amargar el plato y por arruinar la paella.
