Es sin duda uno de los platos m\u00e1s conocidos, -y cocinados-, de nuestro pa\u00eds. Lo que no sabemos la mayor\u00eda de los espa\u00f1oles es <strong>c\u00f3mo, cu\u00e1ndo y porqu\u00e9 se cre\u00f3 este plato tradicional<\/strong>. Y eso es lo que queremos explicar.<\/p>\n<p style=\"text-align: justify;\">La paella nace entre los <strong>siglos XV y XVI<\/strong> en las zonas rurales de <strong>Valencia<\/strong>, ante la necesidad de los agricultores y pastores de la zona de cocinar una comida f\u00e1cil y con los ingredientes que ten\u00edan a mano en sus campos. Adem\u00e1s, un dato curioso es que siempre la com\u00edan por la tarde.<!--more--><\/p>\n<p style=\"text-align: justify;\">No hay informes constrastados de que <strong>la versi\u00f3n \u2018marinera\u2019<\/strong> de la paella naciera en las mismas fechas que la tradicional, pero todo apunta a que los <strong>pescadores<\/strong> supieron aprovechar los <strong>ingredientes<\/strong> que les daba el <strong>mar<\/strong> para crear esta <strong>deliciosa receta alternativa<\/strong>.<\/p>\n<p style=\"text-align: justify;\">Siempre han existido peleas entre cocineros de diferentes comarcas por defender cu\u00e1les eran los <strong>ingredientes originales e indiscutibles de la paella<\/strong>, pero lo cierto es que pocas de las que se cocinan actualmente respetan al 100% la receta original.<\/p>\n<p style=\"text-align: justify;\">En los or\u00edgenes de la paella, se utilizaba la carne del <strong>conejo<\/strong> de campo y de <strong>ave<\/strong>, pero no necesariamente de gallina. Tambi\u00e9n utilizaban las t\u00edpicas <strong>verduras frescas de la huerta <\/strong>valenciana: la <strong>bachoqueta<\/strong>, la <strong>alcachofa<\/strong> y el <strong>garrof\u00f3n<\/strong>. Todo ello se sofre\u00eda con <strong>aceite de oliva<\/strong>, que luego se mezclaba con el <strong>agua, <\/strong>se echaba el arroz y se cocinaba <strong>a fuego lento<\/strong>.<\/p>\n<p style=\"text-align: justify;\">Un dato curioso es que la <strong>le\u00f1a<\/strong> que utilizaban para cocinar la paella era de <strong>naranjo<\/strong>, y es que las <strong>ramas<\/strong> de este \u00e1rbol aportaban un <strong>olor y sabor \u00fanico y muy caracter\u00edstico<\/strong>. En cuanto a los <strong>or\u00edgenes de la palabra \u2018paella\u2019<\/strong>, hay diversas teor\u00edas. La m\u00e1s extendida es que proviene del lat\u00edn, pero hay otra hip\u00f3tesis que apuntan a que podr\u00eda venir de la palabra \u00e1rabe \u2018baqiyah\u2019.<\/p>\n<p style=\"text-align: justify;\">Algunos historiadores creen que la palabra \u2018paella\u2019 podr\u00eda venir del <strong>\u00e1rabe<\/strong> ya que fueron ellos los que trajeron el arroz a Espa\u00f1a en el siglo VIII. Sin embargo, tambi\u00e9n hay otras teor\u00edas que apuntan a algunas leyendas rom\u00e1nticas. Una de ellas es un cuento en el que un hombre prepar\u00f3 este plato para ganarse el cari\u00f1o de su novia.<\/p>\n<p style=\"text-align: justify;\">Y es que se cree que la palabra \u2018paella\u2019 podr\u00eda venir de la frase \u2018por ella\u2019 o \u2018para ella\u2019. Aunque suene a <strong>leyenda urbana<\/strong>, esta teor\u00eda no parece tan descabellada. Tradicionalmente la cocina siempre hab\u00eda sido el lugar de trabajo de las mujeres, pero, sin embargo, <strong>los hombres eran los que siempre se sol\u00edan encargar de cocinar la paella<\/strong>, ya que lo hac\u00edan durante el descanso en sus largas jornadas de trabajo en el campo.<\/p>","protected":false},"excerpt":{"rendered":"<p>La paella, embajadora de la gastronom\u00eda espa\u00f1ola y s\u00edmbolo de Valencia.
